Rhubarb Pie

This recipe is Opa's grandmother's  recipe. On the card below, you can see that Martha Winnes (Opa's mom) added some notes to the card she got from her mother-in-law's recipe. Martha eventually rewrote Mother Winnes' recipe with the extra sugar and other alterations she had made to the recipe. 



2-3 c Rhubarb, cut up
1 1/2 c Sugar 
3 Eggs 
1 T Flour
Dash of Salt
Pie Shell

Make custard from sugar, eggs, flour and salt. Beat together and pour over rhubarb which is in  unbaked pie shell.

Bake 45 - 60 minutes at 350

Martha Winnes noted on the card below that rhubarb could be baked as a crustless pie at 350 for 20 minutes.
