Pakistani Kima

This recipe is a quick meal with ingredients that are usually on hand. It's a  Bickle family favorite, frequently requested. It's not from my recipe box, I got it from a recipe book given to me from Aunt Jan called More-With-Less.

Ingredients:

  • 3 Tbsp butter or margarine (or not at all, see instructions)
  • 1 medium onion, chopped 
  • 1 clove garlic, minced
  • 1 lb ground beef
  • 1 Tbsp curry powder
  • 1-1/2 tsp salt
  • dash pepper
  • generous dash each, to taste: cinnamon, ginger & turmeric
  • 1 or 2 cans diced tomatoes
  • 1 or 2 potatoes, diced
  • 2 cups frozen peas or green beans (sometimes I use canned beans or peas if I don't have frozen)
  • rice, cooked
Instructions:
  • Sauté the onion and garlic in the butter, add ground beef and cook until brown. (I will skip the butter and cook the onion and garlic with the ground beef if I'm in a hurry.) Drain grease if needed.
  • Add the seasonings, tomatoes, potatoes and peas or beans. Bring to a boil, then turn heat down to simmer and cover with a lid. Let simmer for 20 minutes or until the potatoes are done.
  • Sometimes I'll add more salt or seasoning at this point if I think it needs it.

  • Serve over cooked rice.
