Overnight Coffee Cake
This recipe is from Great Grandma Winnes.
- 2/3 cup shortening or softened butter
- 1/2 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup buttermilk (or 1 Tbsp vinegar or lemon juice + enough milk to equal 1 cup, let sit for 5 minutes)
Topping Ingredients:
- 1/2 cup brown sugar
- 1 tsp nutmeg
- 1 cup chopped nuts
Instructions:
- Cream together shortening, sugars. Add eggs.
- Sift together flour, baking powder, soda, cinnamon and salt.
- Add dry mixture to creamed mixture, add buttermilk.
- Pour mixture into a 9x13 inch pan.
- Mix together topping ingredients and spread over cake batter.
- Refrigerate overnight.
- Bake at 350° for 35 minutes.
