Swedish Rice Pudding
Ingredients:
- 1 cup rice
- 2 cups water
- 7 cups milk
- 5 eggs
- 1 cup sugar
- 1-1/2 tsp salt
- dash vanilla
Instructions:
- Cook rice in water.
- Add milk several cups at a time, until all absorbed.
- Beat eggs. Add sugar, salt and vanilla.
- Mix into rice and milk.
- Put into a 3 quart casserole dish, sprinkle top with cinnamon.
- Bake 1 hour at 350ยบ until knife inserted comes out clean.
- Serves 10-12.
Opa's Version:
Cover cooked white rice with milk, let simmer until milk is absorbed. Keep adding milk and simmering until milk is absorbed and rice is desired pudding-y consistency. Add sugar, salt and vanilla to taste. Also, add raisins if desired. Serve warm.
