Swedish Rice Pudding


This recipe is from Grandma Winnes. Opa made a slightly different version, instead of adding eggs and baking, he'd serve it from the sauce pan. Any time there was leftover white rice, Opa would turn it into rice pudding. 


Ingredients:
  • 1 cup rice
  • 2 cups water
  • 7 cups milk
  • 5 eggs
  • 1 cup sugar
  • 1-1/2 tsp salt
  • dash vanilla

Instructions:
  • Cook rice in water.
  • Add milk several cups at a time, until all absorbed.
  • Beat eggs. Add sugar, salt and vanilla.
  • Mix into rice and milk. 
  • Put into a 3 quart casserole dish, sprinkle top with cinnamon.
  • Bake 1 hour at 350ยบ until knife inserted comes out clean.
  • Serves 10-12.
Opa's Version:
Cover cooked white rice with milk, let simmer until milk is absorbed. Keep adding milk and simmering until milk is absorbed and rice is desired pudding-y consistency. Add sugar, salt and vanilla to taste. Also, add raisins if desired. Serve warm.
