Betty's Snickerdoodle Biscotti
Ingredients:
- 2-3/4 all purpose flour
- 1 c sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 Tbsp vegetable oil
- 1 tsp vanilla extract
- 3 large eggs + egg white
- 2 Tbsp sugar
- 1 tsp cinnamon
Instructions:
- Preheat oven to 350°
- Measure flour into a large mixing bowl. Add sugar, baking soda and salt.
- Mix oil, vanilla and whole eggs in a small bowl.
- Add to the large bowl. The dough will be dry and quite crumbly.
- Turn dough onto floured surface and knead 7-8 times.
- Divide dough in half. Shape each portion into a roll about 8 inches long and place 6 inches apart on a cookie sheet. Flatten to about 1 inch thick.
- Combine 2 T sugar and cinnamon. Gently brush the tops of the rolls with egg white. Sprinkle with cinnamon and sugar.
- Bake at 350° for 30 minutes. Remove from sheet and cool 15 minutes.
- Cut diagonally into 1/2 inch slices.
- Reduce oven temperature to 325°, then bake 10 minutes. Turn over and back another 10 minutes.
- As it cools, it will harden. Cool completely on a rack.
