Betty's Snickerdoodle Biscotti

 


Ingredients:
  • 2-3/4 all purpose flour
  • 1 c sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp vegetable oil
  • 1 tsp vanilla extract
  • 3 large eggs + egg white
  • 2 Tbsp sugar
  • 1 tsp cinnamon
Instructions:
  • Preheat oven to 350°
  • Measure flour into a large mixing bowl. Add sugar, baking soda and salt.
  • Mix oil, vanilla and whole eggs in a small bowl.
  • Add to the large bowl. The dough will be dry and quite crumbly.
  • Turn dough onto floured surface and knead 7-8 times.
  • Divide dough in half. Shape each portion into a roll about 8 inches long and place 6 inches apart on a cookie sheet. Flatten to about 1 inch thick.
  • Combine 2 T sugar and cinnamon. Gently brush the tops of the rolls with egg white. Sprinkle with cinnamon and sugar.
  • Bake at 350° for 30 minutes. Remove from sheet and cool 15 minutes.
  • Cut diagonally into 1/2 inch slices.
  • Reduce oven temperature to 325°, then bake 10 minutes. Turn over and back another 10 minutes.
  • As it cools, it will harden. Cool completely on a rack.
