Betty's Holiday Biscotti
This is a recipe that I have made many times over the years. The original title of the recipe was Spring Biscotti, but I think that the colors of the cranberry, white chocolate and pistachio is more fitting for Holiday Biscotti. The orange zest is a surprisingly fresh addition to the recipe.
1/4c Butter
3/4 c White Sugar
1 T Orange Zest
1/2 t Vanilla Extract
2 Egg
2 c All Purpose Flour
1 1/2 t Baking Powder
1/4 t Salt
2 oz White Chocolate
1/2 c Dried Cranberries
1 1/4 c Pistachio Nuts, chopped
1. In a Large bowl cream butter, sugar, orange zest and vanilla until light and fluffy
2. Mix in eggs one at a time beating well after each addition
3. Sift together flour, baking powder and salt. Gradually blend into creamy mixture with wooden spoon
4. Stir in white chocolate, cranberries, and nuts
5. Cover and chill 30 min or until dough is no longer sticky. Preheat the oven to 325*
6. Line the baking sheet with parchment
7. Turn dough on lightly floured surface and divide into halves
8. Form each half into a flattish log about 12 in. long and 3 in. wide. Arrange logs at least 3 in apart on baking sheet
9. Bake 30 min or until pale gold
10. Allow logs to cool on the baking sheet until cool enough to handle
11. On a cutting board, cut logs crosswise on a diagonal into 1 in thick slices
12. Arrange on baking sheet and bake for an additional 15 min or until golden
13. Transfer biscotti to wire racks and cool completely before serving.
